Brownies and traybakes, baked to order
Fudgy, heavy, and never dry. Brownies are what I am best known for, and the traybakes are the heart of what goes into the weekly boxes.
The brownies
A brownie should be heavy. If it springs back like a sponge it has been baked too long and it has stopped being a brownie. Mine come out fudgy and dense, with a proper top on them, and they are the thing people come back for more than anything else I make.
They change every week. One week it might be a Black Forest with cherries through it, the next a cheesecake brownie with a layer set into the middle. The base is the constant; what goes into it and on top of it is what rotates.

The blondies
A blondie is the white chocolate side of the same idea. No cocoa in the base, so it takes fruit, curd and crumble far better than a brownie does. Apple crumble and lemon curd are the two that come round most often, and they tend to be the ones that convert people who say they do not really like chocolate.
The brookies
Brownie on the bottom, cookie on the top, baked together as one thing rather than two things stuck together afterwards. It is the most asked about item on the whole range and the hardest one to get right, because the two halves want different times in the oven.
The cookie pies
A whole cookie baked as a pie and cut into wedges. Usually stuffed with something, so you get a molten middle rather than a flat biscuit. If you have only ever had a cookie as a round on a tray, a cookie pie is a genuinely different thing.
The cookies
Baked to order, stuffed or plain and enormous. There is no small cookie here. They are made the same day they go out, which is the difference between a cookie you finish and one you leave half of.
The cheesecakes
Set in a pot rather than cut from a round, layered, and heavy on the topping. They go into the boxes alongside the traybakes, and they are the item people are most surprised to find in a dessert box rather than on a plate in a restaurant.
They come in a box, not on their own
I do not sell single traybakes. Everything goes into a box you build yourself: any six treats for a Share Box at £20, or any ten for an Ultimate Box at £30.
You are not locked into one thing either. Fill the whole box with brownies if that is what you want, or mix the traybakes with cheesecakes and cookie pies so there is something for everyone in the house. It is your six or your ten.
Why the flavours change every week
This is not a fixed catalogue with a hundred products sitting behind it. A new line-up of ten goes up each week, and the brownies and blondies rotate rather than sitting on a menu all year going stale.
That is a deliberate choice and it is the reason everything is fresh. It is all made from scratch, in small batches, for the week it is being sold in. Nothing is frozen and nothing is bought in. If I kept forty permanent lines I would have to freeze, and then it would taste like everywhere else.
It also means the menu lives on the home page rather than on this one, because whatever I wrote here would be wrong within a week.
Keeping them, and how they travel
They are baked to order for that week, so they are at their best in the first few days. Kept in a sealed tub at room temperature they stay soft; in the fridge a brownie firms up and loses some of the fudge, which is a shame after all that.
Ten seconds in a microwave brings a brownie or a brookie back to just-baked, and it is worth doing before you write one off as having gone past its best. Cheesecakes are the opposite and want to stay cold.
They travel well, which is why the box works. Everything is packed so it arrives as it left, and the traybakes in particular are robust enough to be handed round a table without falling to pieces.
Getting hold of them
Three ways, and they are the same three for everything I make. Delivery goes out on the Friday across Liverpool and the surrounding areas, priced by road distance from my L9 6AD kitchen. Collection is on the Saturday morning between 10am and 12pm. And on the Sunday I am on the stall at The Car Booty, Merton Road, L20, from 6am to 11am.

Allergies
Everything is baked in one small home kitchen that handles nuts, gluten, dairy and eggs, so nothing can be described as free from any allergen and all of it may contain traces of nuts. Message me before you order and read the allergens page.
Common questions
Can I buy just one brownie? No. Everything goes into a box of six or ten. It keeps the baking manageable and it keeps the price honest.
Can I have a box of only brownies? Yes, if the week’s line-up has enough of them on it. You pick every item in your box.
Can you do a box that is free from gluten? No. I cannot describe anything as free from any allergen, because it all comes out of one kitchen. Message me and I will tell you honestly what is in something.
How long do they keep? They are baked to order for that week, so they are at their best in the first few days. They are not made to sit around.
